Korean-style pork ribs with potatoToday I am going to share one of my favorite pork rib recipes with you guys, the Korean-style pork rib and potato.

In the “Korean Style Pan-fried Pork Belly” recipe I shared a couple of weeks ago, I introduced a Korean hot pepper paste. And today, we will need another common seasoning for making Korean food which is the Korean soybean paste in order to make this dish.

Korean kochujiangI started making the dish by stir-frying the marinated pork ribs for about five minutes over medium heat until they are browned.

Then, I carefully poured in two cups of water, and added the star anise and the Korean soybean paste into the pan and make sure all the ingredients are mixed well.

Pork ribsAfter adding the potato into the pan, I simmered for another fifteen minutes with the lid on over medium heat until the potato has turned soft and the sauce is thickened.

Ingredients
  • 1 pound pork short ribs
  • 2 medium potatoes, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 2 cups water
  • 2 tablespoon Korean soybean paste
  • 3 star anise
  • 2 stalks green onion, chopped for topping
  • For marinating the pork ribs:
  • 3-4 ginger slices
  • 4-5 cloves of garlic, cut into slices
  • 1 tablespoon vegetable oil
  • ½ teaspoon salt
  • ½ teaspoon sugar
Instructions
  1. Marinate the pork ribs with the ginger, garlic, oil, salt and sugar for about 10 minutes.
  2. Heat oil in a pan over medium heat, add in the marinated pork ribs and stir fry for about 5 minutes until browned.
  3. Carefully pour in the water, and add the star anise and the Korean soybean paste, gently stir to mix well.
  4. Turn to high heat and bring the water to boil( took me about 2 minutes)
  5. Turn to medium heat and simmer for about 10 minutes with lid off, stir occasionally.
  6. Stir in the potato and cook for another 15 minutes with lid on, until the potato has softened, stir occasionally during the cooking process.
  7. Top with green onion to serve.
